Ingredients for four people:
4 duck legs, 500 grams of fresh pineapple, 100 grams. spring onions, a glass of Cognac, a glass of white wine, 20 gr. of butter, salt and pepper.
PREPARATION:
Heat a pan on the fire. Do brown the thighs on both sides without adding seasonings for about ten minutes, add salt and pepper then add the white wine and cook for about twenty minutes on low heat (as long as in the case of our own animals or wild). In the meantime, to hand, the onions brown in a skillet with butter for about ten minutes, then add the sliced \u200b\u200bpineapple and brown do everything. When cooked, add the two preparations, without removing the fat from the thighs, then deglaze with the cognac and let it evaporate. Serve on plates sprinkled with the gravy.
